Vegan Cookies

In a bowl smash the bananas, after well smashed add the oats, mavu’s peanut butter and mix well the ingredients, once it all well mixed add the chocolate chips on it.

Using a 1 1/2″ cookie scoop, scoop the cookie batter (about a heaping tablespoon of batter) and place on the prepared baking sheet about an inch and a half apart.  Flatten the cookies slightly with the palm of your hand as they won’t spread while baking. Bake for 10 minutes or until set, then remove from heat and sprinkle the tops of the cookies with the flaky sea salt and place on a wire rack to cool.

Mavu Plantain fufu flour's pancakes

Directions:

Combine all the dry ingredients (flour, baking powder, sea salt, and cinnamon) in a large mixing bowl. In a separate bowl, combine the wet ingredients (eggs, coconut oil, and almond milk) and sugar.

Gradually add the dry ingredients into the wet while mixing until everything is thoroughly combined. The batter should be thick, but pourable. If your batter is too thick, simply add small amounts of almond milk until the right consistency is reached.

Grease a skillet with coconut oil and heat it to medium-high heat. Add about 1/2 cup of batter to the pan at a time, flipping the pancakes when bubbles begin to form. I recommend a ceramic pan since they are amazingly non-stick while being toxin-free.

When the pancakes are done, cover them to keep warm and quickly pan fry the ripe plantain slices in coconut oil. Stack the pancakes high and top with fried plantains and plenty of nut butter.

Ingredients for sauce

  • 1 Chopped & seasoned Chicken
  • 100g Mavu’s egusi balls
  • 1 Chicken broth
  • Sea salt
  • 250g Mavu’s peanut butter 
  • 3 tbsp cooking oil
  • Tomatoes
  • 2 Onions
  • 3 garlics
  • Water
  • Bay leaf

Directions:

In a pan, place the already chopped and seasoned chicken, with the 1 onions cut into slices, the garlic, the broth, the bay leaf, water and let it boil until the chicken is ready.

If necessary add more water.

In another pan make a tomato, onion, garlic and oil sautéAdd the Mavu’s peanut butter, and water little by little. Don’t stop turning. Pour over the chicken, turn over and add Mavu’s egusi balls, if necessary add a little water and let it cook for more 8 minutes.
